- Vinification: From organically farmed Xinomavro grapes, fermented by its native yeast with some temperature control in stainless steel, a few days of maceration, and raised for another 5 months in stainless and 6 more in neutral barriques, before bottled unfiltered, unfined, unsulfured.
- Notes: Dark brick red with intense gooseberries and leather notes on the nose and hints of hay, with a surprisingly clean palate and playful tannins.
